Vegan Recipe: My Basic Roasted Chickpeas

Today’s post is a repost of my favorite chickpeas!  I posted this on my old blog, deleted the blog and forgot to save the recipe! I’ve changed a few things since then, and have also changed the method of spicing the chickpeas.

 

Ingredients:

1 16oz. can chickpeas

3 tablespoons Chili Powder

1/2 teaspoon Paprika

2 dashes of cayenne pepper

1/2 teaspoon salt

1/2 teaspoon pepper

About 2 tablespoons oil, I use olive oil. (for mixing/baking)

 

I start by prepping the oven at 400 degree F. with a rack in the middle. I take a clean baking sheet out for use, I then drain and rinse the chickpeas. I will then dry the chickpeas with a clean towel or use a paper towel. Discard any pieces of chickpea “skin”. In a bowl mix the oil with the chickpeas. Place the mixed chickpeas onto the baking dish. Cook these for 15-20 mins, watching for them to not burn or “pop”. Take them out of the oven, using a flat spatula put them in the bowl where you originally mixed them with the oil. Add all of the spices and mix well. Transfer them back onto the baking dish if you prefer, but they are now ready to serve.
