I tried a new recipe this week with my boyfriend. It is from the cookbook But I Could Never Go Vegan! .
This was my first time cooking something from this book. (It was a Christmas Present from 2016.) Overall, it turned out delicious and I will definitely be keeping this meal in my rotation!
I adapted the recipe a little to make it a “quicker” version. I used a can of Manwhich Original Sloppy Joe’s Sauce rather than the canned tomatoes and tomato paste it calls for, and I cut the spices in half. Since the canned sauce already had a bell pepper in it, I skipped the vegetable bell pepper as well.
This is the closest recipe to what I used:
1 can of chickpeas, rinsed and drained
Hamburger buns or bread
1 teaspoon olive oil
1/2 medium red onion diced
2-3 teaspoons of minced garlic
1 can of Manwhich Original Sloppy Joe’s Sauce
3/4 can of water
1 teaspoon oregano
1/2 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon cumin
1 teaspoon soy sauce
(I ended up skipping a majority of the other seasonings: salt + pepper, nutritional yeast, maple syrup, siracha) I was trying to avoid spicy sloppy joes due to my UC.
